Pork and Apple Meatloaf

This flavorful meatloaf is a delicious way to enjoy the classic pork/apple combo!

Ingredients
  

  • 1 egg
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 small onion finely diced
  • 1/2 cup raw carrot grated
  • 1 cup bread crumbs
  • 2 tsp sea salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg optional
  • 1/2 cup applesauce
  • 1/2 cup beef broth
  • 3 medium tart apples Granny Smith or similar peeled, cored, sliced
  • Parsley for garnish if desired

Instructions
 

  • Heat 1 tsp olive oil or butter in a medium pan and sauté onion and carrot for 3 minutes or until softened. Set aside to cool.
  • Preheat oven to 375 degrees Farenheit.
  • Place egg in a large mixing bowl and lightly beat.
  • To the mixing bowl with the egg, add ground pork, ground beef, sauted vegetable mixture, breadcrumbs, salt, ginger, nutmeg, applesauce, and beef broth.
  • Use your hands or a potato masher to thoroughly mix all ingredients in mixing bowl.
  • Lightly grease a 1.5 qt casserole dish and fill the bottom with half of the meat mixture.
  • Cover the meat with half of the apple slices.
  • Place the rest of the meat over the apples and press down to fill the dish.
  • Cover the meatloaf with the rest of the apple slices.
  • Bake for 65-75 minutes, until the meat is cooked through.

Notes

1. I prefer to use panko breadcrumbs in this meatloaf; other packaged breadcrumbs, fresh breadcrumbs, gluten-free panko or almond flour could be substituted.
2. This is delish with barbeque sauce (for real!) or ketchup.
