Heat 1 tsp olive oil or butter in a medium pan and sauté onion and carrot for 3 minutes or until softened. Set aside to cool.
Preheat oven to 375 degrees Farenheit.
Place egg in a large mixing bowl and lightly beat.
To the mixing bowl with the egg, add ground pork, ground beef, sauted vegetable mixture, breadcrumbs, salt, ginger, nutmeg, applesauce, and beef broth.
Use your hands or a potato masher to thoroughly mix all ingredients in mixing bowl.
Lightly grease a 1.5 qt casserole dish and fill the bottom with half of the meat mixture.
Cover the meat with half of the apple slices.
Place the rest of the meat over the apples and press down to fill the dish.
Cover the meatloaf with the rest of the apple slices.
Bake for 65-75 minutes, until the meat is cooked through.
