- Heat 1 tsp olive oil or butter in a medium pan and sauté onion and carrot for 3 minutes or until softened. Set aside to cool. 
- Preheat oven to 375 degrees Farenheit. 
- Place egg in a large mixing bowl and lightly beat. 
- To the mixing bowl with the egg, add ground pork, ground beef, sauted vegetable mixture, breadcrumbs, salt, ginger, nutmeg, applesauce, and beef broth. 
- Use your hands or a potato masher to thoroughly mix all ingredients in mixing bowl. 
- Lightly grease a 1.5 qt casserole dish and fill the bottom with half of the meat mixture. 
- Cover the meat with half of the apple slices. 
- Place the rest of the meat over the apples and press down to fill the dish. 
- Cover the meatloaf with the rest of the apple slices. 
- Bake for 65-75 minutes, until the meat is cooked through.
