We have been having an uncharacteristically balmy winter up here in Minnesota, and I have been loving it. There’s just something about being able to get the kids out for a walk in between viruses, you know? Despite the unusual warmth, I’m very much still in winter food mode. Enter: a root vegetable soups roundup!
Root vegetables tick a wide variety of boxes: delicious, nutritious, comforting, economical. The soups in this roundup are varied, both in the root vegetables they contain and in their other ingredients! Some have root vegetables as the main event, some as only part of a wide variety of ingredients. There’s definitely something for everyone. Bring On The Root Vegetable Soups!
Finnish Salmon Soup (Lohikeitto)

This salmon soup is one of my absolute favorite ways to get more fish into our diet! I also love to switch out some of the russet potatoes for sweet potatoes- just make sure to avoid over-boiling the sweet potatoes. Scroll down for my favorite breads to pair this soup with!
Finnish Sausage Soup (Siskonmakkarakeitto)

Finnish sausage soup is hearty, nourishing and easy to personalize with your preference of root vegetables and fresh sausage flavoring!
Vegetable Beef Soup

This hearty, flavorful beef soup contains a colorful variety of vegetables- with a lot of room to improvise and clean out your crisper!
Slow Cooker Parsnip and Carrot Soup

Not only is this soup wholesome and gorgeous, it’s made in the slow cooker! Imagine coming home to this all ready to eat!
Rutabaga and Carrot Soup

In this flavorful soup, rutabaga is paired with potatoes, carrots and red lentils for a super cozy and nourishing meal!
Ukrainian Borscht Soup

Borscht: the quintessential Eastern European beet soup! This one features beef, making it (in my opinion) a complete meal in a bowl.
Parsnip and Apple Soup

I haven’t worked with parsnips a lot yet, and I am incredibly excited to try this one out. I guess the apples might make it more of a fall fare, but I’m sure it’s delicious throughout the cold weather months!
Lotus Root Soup with Pork Rib

Looking to work with a new root vegetable? Look no further! Lotus root is an edible part of a lotus plant. It can be found in Asian markets.
Butternut Squash and Sweet Potato Soup

Squash may not be a root vegetable, but I do think I would be remiss if I didn’t include at least one squash soup on this list! This soup also contains yams, so it’s totally legit.
Roasted Winter Vegetable Chowder

This thick, hearty soup is sure to warm you up on a cold evening! In addition to a variety of root vegetables, it’s flavored with fennel- one of my absolute favorites!
